Paradise and Pennant Candied Fruit

Candied Pineapple White Chocolate cookies

It’s a mouthful to say, but these cookies are a mouthful to enjoy! The ingredients that make them special are candied pineapple as well as white chocolate chips. These cookies are chewy and soft and have a nice level of sweetness offset by the tropical tang of the pineapple.

Ingredients:

• 1 cup unsalted butter softened
• 1 cup granulated sugar
• 1 cup brown sugar packed
• 2 large eggs
• 2 tsp. real vanilla extract no substitutions
• 3 cups UNBLEACHED all-purpose flour
• 1 tsp. baking soda
• 1 tsp. baking powder
• 1 tsp. sea salt
• 1 1/2 cups oatmeal
• 2 cups white chocolate chips
• 16 oz. container Paradise Tropical Pineapple

Directions:

In a medium bowl, cream butter and sugars until smooth.
