Paradise and Pennant Candied Fruit

Hummingbird Cake

Part of the fun of this tropical spice cake is that the ingredients can change every time you make it. Though bananas remain a constant, what about replacing canned pineapple with candied pineapple, then throwing in candied lime? This creates a perfect opportunity to wow cake fans with unexpected flavors.

Ingredients:

• 3 cups all-purpose flour
• 2 cups granulated sugar
• 1 tsp ground cinnamon
• 1/2 teaspoon cardamom
• 1 tsp baking soda
• 1 tsp salt
• 3 large eggs beaten
• 1 1/4 cup vegetable oil
• 2 tsp vanilla extract
• 1/4 cup candied pineapple
• 2 tablespoons candied lime
• 8 oz crushed pineapple with juice
• 1 cup ripe mashed bananas about 3 bananas
• 1/2 cup coconut flakes (unsweetened)
• 1 cup chopped pecans

Preheat the oven to 350 degrees.
