British Christmas Cake

What truly stands out are the enchanting candied fruits alongside the comforting blend of warm spices and citrus, harmoniously intertwined in this Christmas Cake.

Ingredients:

• 3 c dried currants
• 2 ½ c sultanas (golden raisins)
• 1 ½ c raisins
• 2 ½ c candied cherries (red & green candied cherries)
• ½ c brandy or sherry
• 1 ¼ c butter (salted – softened, at room temperature)
• 1 ¼ c light brown sugar
• 4 large eggs (room temperature)
• 1 tablespoon molasses
• 3 oz almonds (chopped)
• 1 zest from one large orange
• 1 zest from one large lemon
• 2 ¼ c all-purpose flour
• 2 teaspoon British mixed spice blend
