Paradise and Pennant Candied Fruit

Lemon Skillet Cookie

Time to knock off the socks of citrus fans with this tangy dessert that features a fantastic layer of lemon curd in the center, plus candied lemon peel in the dough mixture. When it’s topped with powdered sugar and vanilla ice cream, you’ll have a delectable treat for any occasion.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup butter, melted and cooled slightly
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 lemon, zested and juiced (need all the zest and 1 tsp of juice )
  • 1/4 generous tsp almond extract
  • 1/2 tsp lemon extract
  • 1/4 rounded cup Paradise candied Lemon Peel
  • 1/4 cup lemon curd
  • Yellow gel food coloring (optional)
  • Confectioners’ sugar for dusting
  • Vanilla ice cream topping, optional

Directions:

Preheat oven to 350° F.
